A flavorful and hearty soup combining shrimp, scallops, fresh vegetables, and herbs, perfect for a comforting meal.

Ingredients

Sea Scallops

  • 8 oz Sea Scallops, side muscles removed (optional)
  • 1 1/2 lb shrimp, peeled and deveined

Vegetables and herbs

  • 1 green bell pepper green bell pepper, cored, chopped
  • 1 red bell pepper red bell pepper, cored, chopped
  • 1 medium yellow onion, chopped
  • 6 cloves garlic, peeled, minced
  • 3 tbsp tomato paste
  • 1 tbsp dried oregano, divided
  • 7 cups low-sodium broth (vegetable or chicken)
  • 3 large tomatoes, diced
  • 1 cup orzo pasta (whole wheat preferred)
  • 6 oz baby spinach
  • 1 cup chopped fresh parsley leaves
  • 1 cup chopped fresh dill, stems removed
  • 1 lemon juice of lemon

Crushed red pepper flakes, optional

Instructions 

  • Pat scallops dry, season with salt and pepper. Sear in a hot skillet until golden, then set aside.
  • In the same skillet, sear shrimp until pink, then set aside.
  • In a pot, sauté peppers, onions, garlic, tomato paste, salt, and oregano for 5 minutes.
  • Add broth and tomatoes, bring to a boil, then cook for 3-5 minutes.
  • Add orzo and cook until tender, about 8 minutes. Stir in spinach, parsley, dill, and lemon juice.
  • Return scallops and shrimp to warm through for 1-2 minutes. Adjust seasoning and serve.

Notes

Use fresh herbs for the best flavor and serve with crusty bread.
