Delight in these savory Mediterranean muffins packed with feta, olives, and zaatar for a flavorful snack or breakfast.

Ingredients

Dried ingredients

  • 3 pieces eggs (room temperature)
  • 1 tsp white vinegar
  • 1 tsp yeast
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp sugar
  • 1/4 cup olive oil
  • 3/4 cup yogurt (170g)
  • 1 1/4 cup flour (155g)
  • 8 oz feta cheese (200g)
  • 3 tbsp sliced green olives
  • 3 tbsp sliced black olives
  • 3 tbsp zaatar powder

Instructions 

  • Preheat oven to 350F (180C). Mix eggs, vinegar, yeast, baking powder, salt, sugar, olive oil, and yogurt until just combined.
  • Fold in flour, then add feta, olives, and zaatar; mix until combined.
  • Divide batter into a greased or floured muffin pan. Bake for 20-23 minutes until golden.

Notes

Use a toothpick to check for doneness; bake on middle rack for best results.
