Ingredients

Flatbread

  • 1 piece Flatbread

Vegetables

  • 1 medium Zucchini
  • 1 medium Bell peppers
  • 1 medium Eggplant

Seasonings & Oils

  • 2 tablespoons Olive oil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Fresh basil or parsley

Instructions 

  • Slice zucchini, bell peppers, and eggplant into even pieces.
  • Heat grill to medium-high and grill vegetables for 3-4 minutes per side until softened.
  • Warm flatbread on the grill or in a skillet until soft and slightly crisp.
  • Lay grilled vegetables over the flatbread evenly.
  • Drizzle with olive oil and scatter fresh herbs on top.
