Ingredients

Chicken

  • 4 pieces whole chicken breast

Marinade

  • 0.25 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon dried thyme
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Salad

  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes (halved)
  • 0.5 cup cucumber (diced)
  • 0.25 cup red onion (thinly sliced)
  • 0.25 cup Kalamata olives (pitted and halved)
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Herbs

  • 0.25 cup fresh parsley (chopped)
  • 1 tablespoon fresh mint (chopped)

Instructions 

  • Whisk together olive oil, lemon juice, garlic, oregano, basil, thyme, salt, and black pepper to make marinade.
  • Marinate chicken in the mixture for at least 30 minutes in the refrigerator.
  • Preheat grill to medium-high. Grill chicken 6-8 minutes per side until cooked through. Rest and slice.
  • Combine cooked quinoa, cherry tomatoes, cucumber, red onion, olives, lemon juice, olive oil, parsley, mint, salt, and pepper. Toss to combine.
  • Serve grilled chicken with the lemon herb quinoa salad. Enjoy!

Notes

Marinate the chicken overnight for more flavor.
