Ingredients

  • 3/4 cup plain nonfat Greek yogurt
  • 1/3 cup canned chickpeas (drained, rinsed)
  • 1/4 cup diced cucumber (about 40 g)
  • 1/4 cup halved cherry tomatoes (about 40 g)
  • 1 tsp extra-virgin olive oil
  • 1 tsp lemon juice
  • 1 tbsp fresh dill or parsley (chopped)
  • 1/8 tsp salt (or to taste)
  • 1/8 tsp black pepper
  • 1 tbsp toasted pine nuts or chopped walnuts

Serving accompaniments

  • 2 pieces whole-grain crispbreads or sliced bell pepper (for dipping)

Instructions 

  • Mix Greek yogurt, lemon juice, olive oil, dill, salt, and pepper until smooth.
  • Lightly mash chickpeas and fold into the yogurt mixture.
  • Stir in diced cucumber and cherry tomatoes.
  • Spoon into a cup, top with toasted nuts, and serve with crispbreads or pepper slices.
