A fresh and flavorful Mediterranean chickpea salad perfect for a quick lunch or side dish.

Ingredients

Main

  • 2 cups cooked chickpeas
  • 0.25 cup red onions (diced)
  • 2 tbsp fresh parsley (finely diced)
  • 1 tomato diced seeded tomato
  • 2 Persian cucumbers diced Persian cucumbers
  • 1 tbsp jalapeno (* finely diced)
  • 1/3 cup olive oil
  • 1/8 cup fresh lemon juice (1 lemon)
  • 2 garlic cloves mashed into a paste
  • 1 tsp sea salt
  • 1.5 tsp cumin

Instructions 

  • Add all salad ingredients into a large bowl.
  • Shake all dressing ingredients in a jar until combined.
  • Pour dressing over salad and toss to combine.
  • Let the salad marinate for 30 minutes before serving.
  • Serve and enjoy!

Notes

For extra flavor, chill the salad before serving.
