A flavorful baked dish combining tender chicken, fresh vegetables, and melted cheese, perfect for a healthy and satisfying meal.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Vegetables

  • 2 medium zucchini (sliced into half-moons, fresh only)
  • 1 cup cherry tomatoes (halved)
  • 1 medium red onion (thinly sliced)

Aromatics & Seasonings

  • 3 cloves garlic (minced)
  • 2 tablespoons olive oil (or avocado oil)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon smoked paprika (regular paprika works too)
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper (freshly ground preferred)
  • 1/4 teaspoon red pepper flakes (optional)

Cheese

  • 1 cup mozzarella cheese (shredded)
  • 1/2 cup Parmesan cheese (grated)

Garnish

  • 2 tablespoons fresh parsley (chopped, for garnish)

Instructions 

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch dish.
  • Combine chicken, zucchini, tomatoes, onion, garlic, oil, and seasonings; toss to coat.
  • Spread in dish, arrange chicken apart, top with cheeses.
  • Cover with foil and bake 20 mins, then uncover and bake 10-15 mins until golden and chicken reaches 165°F.
  • Rest 5 mins, garnish with parsley, then serve.

Notes

Use fresh herbs for best flavor and adjust seasoning to taste.
