Instructions
Preheat oven to 375°F (190°C) and grease a 9×13-inch dish.
Combine chicken, zucchini, tomatoes, onion, garlic, oil, and seasonings; toss to coat.
Spread in dish, arrange chicken apart, top with cheeses.
Cover with foil and bake 20 mins, then uncover and bake 10-15 mins until golden and chicken reaches 165°F.
Rest 5 mins, garnish with parsley, then serve.

Use fresh herbs for best flavor and adjust seasoning to taste.
