A hearty and flavorful soup combining tender chicken, fresh vegetables, and Mediterranean herbs for a comforting meal.

Ingredients

Protein

  • 1 lb boneless chicken breasts or thighs, cut into pieces

Vegetables

  • 1 medium onion, chopped
  • 2 carrots carrots, chopped
  • 2 celery stalks celery stalks, chopped

Aromatics & Herbs

  • 3 garlic cloves garlic, minced
  • 1 can (14 oz) diced tomatoes with juices

Liquids & Oils

  • 6 cups chicken broth
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice

Herbs & Spices

  • 1 teaspoon fresh oregano, chopped (or ½ teaspoon dried oregano)
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • ½ teaspoon smoked paprika or a splash of liquid smoke

Seasonings

  • to taste salt and pepper
  • 1 cup cooked chickpeas or ½ cup orzo
  • Pinch red pepper flakes or a dash of harissa
  • 1 cup fresh spinach or kale (added near end)

Instructions 

  • Chop onions, carrots, and celery; mince garlic; prepare chicken and herbs.
  • Heat olive oil in a large pot over medium heat. Sauté vegetables until softened, about 5 minutes.
  • Add garlic and cook for 1 minute. Add chicken pieces and sear until opaque.
  • Pour in chicken broth and diced tomatoes. Bring to a boil, then simmer for 15-20 minutes.
  • Season with herbs, salt, and pepper. Stir in lemon juice and parsley. Add greens near the end to wilt.

Notes

For extra flavor, add a pinch of smoked paprika or a splash of liquid smoke.
