A flavorful and hearty dish combining tender chicken with Mediterranean vegetables and herbs, baked to perfection.

Instructions
Preheat oven to 375°F (190°C).
Heat olive oil, sear chicken 3-4 mins per side, then set aside.
Cook mushrooms 5-7 mins, then add tomatoes, broth, olives, sun-dried tomatoes, salt, pepper, and thyme. Simmer.
Return chicken to pot, cover, and bake 25-30 mins until cooked through.
Remove from oven, discard thyme sprigs, sprinkle with Parmesan and garnish with thyme. Serve hot.
Notes
For extra flavor, let the dish rest for 5 minutes before serving.
