A flavorful and hearty dish combining tender chicken with Mediterranean vegetables and herbs, baked to perfection.

Ingredients

olive oil

  • 2 tablespoons olive oil

chicken

  • 1.5 pounds boneless, skinless chicken thighs or breasts, cut into 1.5-inch chunks

vegetables

  • 1 cup sliced mushrooms
  • 0.5 cup pitted black olives
  • 0.25 cup sliced sun-dried tomatoes (packed in oil, drained)

canned tomatoes

  • 1 28 ounce can crushed tomatoes

liquids

  • 1 cup chicken broth
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

herbs

  • 2 sprigs fresh thyme, plus more for garnish

cheese

  • 0.25 cup grated Parmesan cheese

Instructions 

  • Preheat oven to 375°F (190°C).
  • Heat olive oil, sear chicken 3-4 mins per side, then set aside.
  • Cook mushrooms 5-7 mins, then add tomatoes, broth, olives, sun-dried tomatoes, salt, pepper, and thyme. Simmer.
  • Return chicken to pot, cover, and bake 25-30 mins until cooked through.
  • Remove from oven, discard thyme sprigs, sprinkle with Parmesan and garnish with thyme. Serve hot.

Notes

For extra flavor, let the dish rest for 5 minutes before serving.
