A flavorful baked egg dish featuring feta, cherry tomatoes, and spinach, perfect for a nutritious breakfast or brunch.

Ingredients

Vegetables

  • 2 cups cherry tomatoes, halved
  • 3 cups fresh baby spinach

Dairy

  • 1 block 8 oz feta cheese

Eggs

  • 8 large eggs large eggs

Seasonings & Oils

  • 3 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • to taste salt Salt
  • to taste black pepper Black pepper

Fresh herbs

  • for serving Fresh basil (Torn for garnish)

Instructions 

  • Preheat oven to 400°F (200°C). Drizzle olive oil in a baking dish and spread evenly.
  • Scatter cherry tomatoes and spinach in the dish. Place feta in the center.
  • Drizzle remaining olive oil, add garlic, oregano, red pepper flakes, salt, and pepper. Bake for 15 minutes.
  • Make 8 wells in the mixture, crack eggs into each, and bake for another 10-15 minutes.
  • Rest for 5 minutes, then garnish with torn basil before serving.

Notes

For fully set yolks, bake a few extra minutes. Reheat leftovers gently for best results.
