Instructions
Preheat oven to 400°F (200°C). Drizzle olive oil in a baking dish and spread evenly.
Scatter cherry tomatoes and spinach in the dish. Place feta in the center.
Drizzle remaining olive oil, add garlic, oregano, red pepper flakes, salt, and pepper. Bake for 15 minutes.
Make 8 wells in the mixture, crack eggs into each, and bake for another 10-15 minutes.
Rest for 5 minutes, then garnish with torn basil before serving.
Notes
For fully set yolks, bake a few extra minutes. Reheat leftovers gently for best results.
