Ingredients

Pie Dough

  • 4 pieces Orange Zest Pie Dough (recipe follows)
  • 4 pieces cinnamon sticks
  • 12 whole cloves
  • 6 whole black peppercorns
  • 4 cups whole milk (plus more if needed)
  • 1 inch fresh ginger (cut crosswise into ⅛-inch-thick slices)
  • 1 tablespoon ground cardamom
  • 2 bags black tea
  • 1.5 cups granulated sugar (divided)
  • 7 tablespoons cornstarch
  • teaspoons kosher salt (divided)
  • 4 large egg yolks
  • 2 large eggs
  • ¼ cup unsalted butter (cubed and softened)
  • 6 ounces cream cheese (softened)
  • 2 cups cold heavy whipping cream

Garnish

  • ground cinnamon
  • ground cardamom

Instructions 

  • Preheat oven to 400°F (200°C).
  • Roll chilled dough into a 14-inch circle, fit into a 9-inch pie plate, trim, fold edges, and freeze for 20 minutes.
  • Bake crust until lightly golden, then cool completely.
  • Crush spices, simmer with milk and ginger, steep, then strain and heat again.
  • Whisk sugar, cornstarch, salt, egg yolks, and eggs; cook with milk until thickened, then chill.
  • Fill crust with custard, chill, then top with whipped cream cheese mixture and garnish.

Notes

Ensure custard is fully chilled before serving for best texture.
