Instructions
Preheat oven to 400°F (200°C).
Roll chilled dough into a 14-inch circle, fit into a 9-inch pie plate, trim, fold edges, and freeze for 20 minutes.
Bake crust until lightly golden, then cool completely.
Crush spices, simmer with milk and ginger, steep, then strain and heat again.
Whisk sugar, cornstarch, salt, egg yolks, and eggs; cook with milk until thickened, then chill.
Fill crust with custard, chill, then top with whipped cream cheese mixture and garnish.
