A warm, comforting vegan apple crumble with a hint of cinnamon and maple sweetness, perfect for a cozy dessert.

Ingredients

Apples

  • 6 cups diced apples (about 6-8 whole apples (see notes for best varieties))
  • 2 tablespoons fresh lemon juice
  • 8 tablespoons pure maple syrup (divided)
  • 1 teaspoon vanilla extract
  • 1.5 teaspoons ground cinnamon
  • 2 tablespoons arrowroot or cornstarch
  • 2 cups rolled oats (divided)
  • 1 pinch sea salt
  • 4 tablespoons vegan butter (diced, plus extra for greasing)

Vegan vanilla ice cream

Instructions 

  • Preheat oven to 350°F (175°C). Grease a 2-quart baking dish with vegan butter.
  • Toss apples with lemon juice, 4 tbsp maple syrup, vanilla, cinnamon, and arrowroot. Pour into dish.
  • Blend 1 cup oats into coarse flour, then mix with remaining oats, salt, butter, and 4 tbsp maple syrup until crumbly. Sprinkle over apples.
  • Bake for 40-45 minutes until golden and bubbling. Cool for 10 minutes before serving.
  • Serve warm or at room temperature, optionally with vegan vanilla ice cream.

Notes

Use tart, firm apples like Granny Smith for best flavor and texture.
