A quick and healthy low-carb toast topped with creamy cottage cheese and fresh herbs, perfect for a nutritious snack or breakfast.

Ingredients

Bread

  • 2 slices low-carb bread (seed-based or almond flour) (sliced about 1 cm thick)

Dairy

  • 0.25 cup cottage cheese (full-fat preferred for creaminess)

Fruits

  • 1 lemon lemon juice (freshly squeezed)

Seasonings

  • to taste salt (preferably sea salt)
  • to taste pepper (freshly ground)

Oils & Fats

  • 1-2 tablespoons olive oil (or butter for drizzling)

Optional herbs

  • optional fresh herbs (dill or chives) (chopped)

Instructions 

  • Toast the bread slices until golden, about 3-4 minutes at 200°C.
  • Mix cottage cheese with lemon juice, salt, and herbs if using until creamy.
  • Spread the cottage cheese mixture over warm toast, allowing it to melt slightly.
  • Heat a skillet and place the topped toasts, cheese side down, for 1-2 minutes until bubbly.
  • Flip and cook for another 30 seconds to 1 minute, then remove and rest.
  • Drizzle with olive oil, add herbs if desired, and serve immediately.

Notes

Use full-fat cottage cheese for extra creaminess and flavor.
