Ingredients
Bread

low-carb bread (seed-based or almond flour)
(sliced about 1 cm thick)

Instructions
Toast the bread slices until golden, about 3-4 minutes at 200°C.
Mix cottage cheese with lemon juice, salt, and herbs if using until creamy.
Spread the cottage cheese mixture over warm toast, allowing it to melt slightly.
Heat a skillet and place the topped toasts, cheese side down, for 1-2 minutes until bubbly.
Flip and cook for another 30 seconds to 1 minute, then remove and rest.
Drizzle with olive oil, add herbs if desired, and serve immediately.
Notes
Use full-fat cottage cheese for extra creaminess and flavor.
