Ingredients

Protein

  • 2 lbs Fresh Chicken Breast (Boneless and skinless)

Vegetables

  • 2 cups Low-Carb Vegetables (Mix of broccoli, bell peppers, and zucchini)

Cheese

  • 1 cup Cheddar Cheese (Shredded for melting)

Dairy

  • 0.5 cup Heavy Cream (Can substitute with unsweetened almond milk)

Oils & Seasonings

  • 2 tablespoons Olive Oil (For cooking the chicken)
  • 1 teaspoon Garlic Powder (Or fresh minced garlic)
  • to taste Salt
  • to taste Pepper

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cook chicken breasts in olive oil until browned and cooked through, then shred.
  • Mix cooked chicken, vegetables, garlic powder, salt, and pepper in a bowl.
  • Transfer mixture to a baking dish, pour heavy cream over, and top with shredded cheese.
  • Bake for 20-25 minutes until cheese is melted and bubbly.

Notes

Feel free to add your favorite low-carb vegetables for variety.
