Ingredients

Meat

  • 1 lb 99% lean ground turkey

Tortillas

  • 8 small corn tortillas

Seasoning

  • 1 tablespoon low-sodium taco seasoning

Water

  • 0.5 cup water

Vegetables & Dairy

  • 1 cup shredded romaine lettuce
  • 0.5 cup diced roma tomatoes
  • 0.25 cup non-fat Greek yogurt
  • 0.25 cup reduced-fat shredded cheddar cheese

Salsa

  • 0.5 cup salsa

Instructions 

  • Preheat oven to 400°F (200°C).
  • Bake tortillas 4-5 minutes per side until crisp.
  • Cook turkey in a skillet until browned, then add seasoning and water, simmer until liquid evaporates.
  • Assemble tostadas with turkey, lettuce, tomatoes, cheese, salsa, and Greek yogurt.

Notes

For extra flavor, add fresh cilantro or lime juice.
