Instructions
Cook the lentils with water and bay leaf until soft, about 16-20 minutes.
Drain and chill the lentils in the fridge for a few minutes.
Mix in diced cucumber, red onion, dates, and chopped parsley.
Drizzle with lemon vinaigrette and toss to combine.
