A vibrant and nutritious lentil salad combining fresh vegetables, dates, and a tangy lemon vinaigrette.

Ingredients

Dried ingredients

  • 1 cup lentils
  • 4 cups water
  • 1 large bay leaf
  • 1 large cucumber (finely diced)
  • 0.5 red onion red onion (finely diced)
  • 1 cup Medjool dates (finely diced)
  • 1 small bunch flat leaf parsley
  • 1 recipe Lemon Vinaigrette (use half in this recipe)

Instructions 

  • Cook the lentils with water and bay leaf until soft, about 16-20 minutes.
  • Drain and chill the lentils in the fridge for a few minutes.
  • Mix in diced cucumber, red onion, dates, and chopped parsley.
  • Drizzle with lemon vinaigrette and toss to combine.

Notes

Chill the salad before serving for best flavor.
