Instructions
Cook the penne in salted boiling water until al dente, then drain and set aside.
While pasta cooks, sear the salmon in a hot skillet until cooked through, then flake into large pieces.
In a large bowl, combine cooked pasta, cherry tomatoes, red onion, and salmon.
Whisk together lemon juice, pesto, olive oil, salt, and black pepper to make the dressing.
Pour the dressing over the pasta mixture, toss gently, then garnish with fresh basil and grated parmesan.
Notes
For extra flavor, let the salad chill in the fridge for 30 minutes before serving.
