Lemon Herb Grilled Chicken with Couscous

A flavorful and healthy dish featuring marinated grilled chicken served over fluffy couscous with fresh herbs and vegetables.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • Juice of 1 large lemon lemon juice
  • Zest of 1 lemon lemon zest
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • to taste salt and pepper

Grain

  • 1 cup couscous
  • 1 cup low-sodium chicken broth or water
  • 1 tablespoon olive oil
  • to taste salt
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon juice
  • 1 small cucumber, diced
  • 1 small tomato, diced (optional)

Instructions 

  • Whisk olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper. Marinate chicken for 30 minutes.
  • Bring broth to a boil, add salt and olive oil, stir in couscous, cover, and let sit for 5 minutes. Fluff and mix in parsley, lemon juice, cucumber, and tomato.
  • Grill chicken over medium-high heat for 5-6 minutes per side until cooked through. Rest before slicing.
  • Serve couscous topped with sliced chicken and garnish with herbs or lemon wedges.

Notes

Marinate the chicken longer for more flavor, and feel free to add extra herbs or vegetables to customize.
