Ingredients

Protein

  • 2 pounds boneless, skinless chicken breasts (cut into 1 1/2-inch pieces)
  • 0.25 cup olive oil
  • 0.25 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 4 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon paprika

Vegetables

  • 1 medium red onion (cut into chunks)
  • 1 bell pepper cut into chunks

Instructions 

  • Whisk together olive oil, lemon juice, lemon zest, garlic, herbs, salt, pepper, mustard, and paprika to make marinade.
  • Add chicken to marinade, toss to coat, cover, and refrigerate for 30 minutes to 2 hours.
  • Thread chicken, onion, and bell pepper onto skewers, alternating ingredients.
  • Preheat grill to 400-425°F, clean and oil grates.
  • Grill skewers for 10-14 minutes, turning every 3-4 minutes, until chicken reaches 165°F internal temperature.
  • Rest skewers for 5 minutes, then optionally squeeze extra lemon juice and sprinkle parsley before serving.

Notes

Marinate the chicken for at least 30 minutes for best flavor.
