Instructions
Whisk together olive oil, lemon juice, lemon zest, garlic, herbs, salt, pepper, mustard, and paprika to make marinade.
Add chicken to marinade, toss to coat, cover, and refrigerate for 30 minutes to 2 hours.
Thread chicken, onion, and bell pepper onto skewers, alternating ingredients.
Preheat grill to 400-425°F, clean and oil grates.
Grill skewers for 10-14 minutes, turning every 3-4 minutes, until chicken reaches 165°F internal temperature.
Rest skewers for 5 minutes, then optionally squeeze extra lemon juice and sprinkle parsley before serving.
Notes
