Ingredients

Protein

  • 2 cups cooked chicken, shredded or chopped

Vegetables

  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • ½ cucumber sliced cucumber
  • ¼ red onion thinly sliced red onion
  • ½ cup celery, diced

Herbs

  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh basil, chopped

Dressing

  • ½ cup Greek yogurt
  • 2 tablespoons olive oil
  • Juice of 1 lemon lemon juice
  • Zest of 1 lemon lemon zest
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  • If using raw chicken, cook it in a skillet over medium heat until fully cooked. Cool and chop.
  • Mix Greek yogurt, olive oil, lemon juice, lemon zest, garlic powder, salt, and black pepper to make the dressing.
  • Combine chicken, tomatoes, cucumber, onion, celery, parsley, and basil in a large bowl.
  • Pour dressing over the salad and toss gently to coat.
  • Chill for 10-15 minutes, then serve over mixed greens.

Notes

For extra flavor, add a sprinkle of additional herbs or a squeeze of lemon before serving.
