Ingredients

Protein

  • 3 cups cooked chicken, shredded or diced

Dressing

  • 0.5 cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 0.5 cup finely chopped celery
  • 0.25 cup finely chopped red onion
  • 0.25 cup chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup chopped cucumbers (optional) (optional)
  • 2 tablespoons chopped almonds or walnuts (optional) (optional)
  • 1 tablespoon chopped chives (optional) (optional)

Instructions 

  • Combine cooked chicken in a large bowl.
  • Finely chop celery, red onion, parsley, and dill; add to chicken.
  • Mix mayonnaise, Greek yogurt, lemon juice, lemon zest, salt, and pepper to make dressing.
  • Pour dressing over chicken and vegetables; stir gently to coat.
  • Fold in optional cucumbers, nuts, and chives if desired. Chill before serving.

Notes

For best flavor, refrigerate for at least 20-30 minutes before serving.
