A flavorful and easy lemon chicken skillet perfect for a quick dinner with bright citrus notes.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • Salt and black pepper to taste Salt and black pepper (to taste)
  • ½ teaspoon dried oregano
  • ½ teaspoon thyme
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • ¼ cup freshly squeezed lemon juice (about 1–2 lemons)
  • 1 tablespoon lemon zest
  • 2 tablespoons unsalted butter
  • Lemon slices Lemon slices (for garnish)
  • Chopped parsley Chopped parsley (for garnish)

Instructions 

  • Pat chicken dry and season with salt, pepper, oregano, and thyme.
  • Heat oil in skillet, cook chicken 5-6 mins per side until cooked through. Remove and set aside.
  • Sauté garlic 30 seconds, add broth and lemon juice, scrape browned bits, add lemon zest, simmer 2-3 mins.
  • Stir in butter until melted, then return chicken to skillet and simmer 2-3 mins.
  • Garnish with lemon slices and parsley before serving. Enjoy!

Notes

For extra flavor, marinate chicken with herbs beforehand.
