A flavorful and aromatic dish combining tender lamb with fragrant spices served over fluffy couscous.

Ingredients

Meat

  • 2 lbs lamb shoulder or leg, cut into 2cm chunks
  • as needed olive oil
  • 2 tsp paprika
  • 2 tsp cinnamon
  • 1 tsp garlic powder
  • 2 tsp coriander
  • 2 tsp cumin
  • 1 tsp cardamom
  • 2 tsp ginger
  • 1 tsp turmeric
  • 2 tsp cayenne pepper
  • 1 tsp cloves
  • 1/4 tsp saffron dissolved in warm water
  • 2 red onions diced
  • 6 cloves garlic minced
  • 4 medium carrots diced
  • 1 lemon juice and zest
  • 4 cups chicken broth
  • 2 tbsp sun-dried tomato paste
  • 1 tbsp honey
  • 1/4 cup cilantro chopped
  • 1/4 cup mint leaves chopped

Instructions 

  • Marinate lamb with spices for at least 8 hours or overnight.
  • Heat oil and sear lamb until caramelized; set aside.
  • Sauté onions and carrots, then add garlic, ginger, and lemon zest.
  • Deglaze with broth, stir in tomato paste and honey, then add lamb and simmer 1.5-2 hours.
  • Thicken sauce with cornstarch slurry, prepare couscous, and serve topped with herbs and vegetables.

Notes

Use fresh herbs for best flavor and adjust spice levels to taste.
