  • 2 cups Fresh Corn Kernels
  • 1 medium Zucchini, grated
  • 1 cup All-Purpose Flour
  • 1 large Egg, beaten
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 tablespoons Fresh Parsley, chopped
  • 2 tablespoons Fresh Chives, chopped
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 0.25 cup Vegetable Oil, for frying

Instructions 

  • Mix corn, zucchini, flour, egg, baking powder, salt, pepper, parsley, chives, garlic powder, and onion powder until smooth.
  • Heat oil in a pan over medium heat until shimmering.
  • Drop spoonfuls of batter into oil, flatten slightly, and fry 3-4 minutes per side until golden and crispy.
  • Remove fritters and drain on paper towels. Serve warm.
