Jewelled winter slaw

A vibrant and crunchy winter slaw packed with fresh herbs, citrus, and nuts for a delightful seasonal dish.

Ingredients

Vegetables

  • 1 piece fennel bulb
  • ½ head red cabbage
  • 1 piece cooked beetroot
  • ¼ cup celeriac, peeled
  • 1 piece lemon (zest and juice)
  • ¼ pack mint, leaves only
  • ¼ pack coriander
  • 2 pieces clementines
  • ½ tsp fennel seeds
  • 4 tbsp plain yogurt
  • a small pinch chilli flakes
  • a small handful cashews or walnuts, chopped
  • a small handful pomegranate seeds, to serve

Instructions 

  • Finely slice the fennel and cabbage, and cut beetroot and celeriac into matchsticks. Place in a bowl and squeeze over lemon juice.
  • Chop herbs, peel clementines, and add segments to the bowl with fennel seeds.
  • Mix in yogurt, season, sprinkle chili flakes and lemon zest, then toss. Top with nuts and pomegranate seeds before serving.

Notes

Use fresh herbs and serve immediately for the best crunch and flavor.
