Ingredients

Meat

  • 1.5 lbs ground turkey breast
  • 1 large onion (chopped)
  • 3 cloves garlic (finely minced)
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 1.5 cups carrots (sliced)
  • 1.5 cups celery (sliced)
  • 1 can diced tomatoes (not drained (28 oz))
  • 3 cups beef broth
  • 4 tbsp tomato paste
  • 1 tbsp fresh basil (or 1 tsp dry)
  • 1 tbsp fresh oregano (or 1 tsp dry)
  • 1 tbsp fresh thyme (or 1 tsp dry)
  • 0.5 tsp chili pepper flakes
  • 0.25 cup fresh parsley

Instructions 

  • Heat olive oil and sauté turkey, onion, garlic, salt, and pepper until browned.
  • Transfer to a Dutch oven; sauté carrots and celery in same skillet, then add to pot.
  • Deglaze skillet with tomatoes, add broth, tomato paste, herbs, and simmer for 30-40 minutes.
  • Add parsley in the last 5-10 minutes of cooking.
