Instructions
Heat olive oil and sauté turkey, onion, garlic, salt, and pepper until browned.
Transfer to a Dutch oven; sauté carrots and celery in same skillet, then add to pot.
Deglaze skillet with tomatoes, add broth, tomato paste, herbs, and simmer for 30-40 minutes.
Add parsley in the last 5-10 minutes of cooking.
