A delicious and easy-to-make flatbread sandwich featuring marinated chicken, pesto, mozzarella, and fresh tomatoes, perfect for a quick lunch or dinner.

Ingredients

Dressing and Marinade

  • 0.33 cup Wish-Bone Italian Dressing and Seasoning Mix
  • 0.25 cup oil
  • 0.25 cup water
  • 0.25 cup white balsamic vinegar (can sub other vinegars)
  • 1.5 pounds Tyson Chicken Breasts (cut in thin strips)

Flatbreads

  • 6 pieces flatbreads

Pesto Sauce

  • 6 tablespoons pesto sauce (use less if desired or if pesto is thin)

Mozzarella Cheese

  • 6 slices mozzarella cheese (exact amount depends on your preference)

Tomatoes

  • 12 slices tomato slices

Instructions 

  • Whisk dressing mix, oil, water, and vinegar in a small bowl. Marinate chicken for 30 minutes.
  • Cook marinated chicken in a skillet until browned and cooked through. Discard remaining marinade.
  • Heat flatbreads on a grill or pan. Brush one side with reserved marinade, place coated side down.
  • Spread pesto on half of each flatbread, top with mozzarella, cooked chicken, and tomato slices. Add extra cheese if desired.
  • Fold flatbreads over fillings and cook until browned and cheese melts. Slice and serve.

Notes

For a crispier sandwich, cook on a panini press or indoor grill until golden.
