Enjoy a flavorful bowl of tender chicken thighs glazed with sweet and spicy honey sauce, served over rice with fresh vegetables and garnishes.

Ingredients

Protein

  • 1.5 lbs boneless skinless chicken thighs (about 4–5 thighs)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • 3 tbsp honey (use a good quality honey; it’s the star)
  • 1 –2 tbsp hot sauce (Frank’s RedHot or Cholula work great)
  • 1 tbsp unsalted butter
  • 2 cloves garlic (minced)
  • ½ tsp red pepper flakes (adjust to your heat preference)

Base

  • 2 cups cooked white or brown rice (or rice of choice)
  • 1 cup sliced cucumber
  • 1 avocado avocado (sliced)
  • ½ cup shredded red cabbage
  • 2 green onions green onions (thinly sliced)

Garnishes & Extras

  • Fresh cilantro or parsley (to serve)
  • Sesame seeds (for garnish)
  • Lime wedges (for serving)
  • Sriracha mayo (mix 2 tbsp mayo + 1 tsp sriracha)
  • Pickled red onions (for a tangy kick)
  • ½ cup corn kernels (fresh or roasted)

Instructions 

  • Season chicken thighs with garlic powder, smoked paprika, onion powder, salt, and black pepper.
  • Heat olive oil in a skillet and cook chicken until browned and cooked through, about 6-8 minutes per side.
  • In the last few minutes, add honey, hot sauce, butter, minced garlic, and red pepper flakes; toss to coat.
  • Serve sliced chicken over rice with cucumber, avocado, cabbage, green onions, and garnishes. Drizzle with sriracha mayo and add lime wedges.
