Ingredients

Protein

  • 2 pieces Chicken breast or chicken thighs boneless, skinless
  • 2 tablespoons Honey
  • 3 cloves Garlic, fresh (minced)
  • 3 tablespoons Soy sauce
  • 1 tablespoon Olive oil or vegetable oil
  • 2 cups Cooked rice (white, brown, or jasmine)
  • to taste Salt
  • to taste Black pepper
  • 1 teaspoon Cornstarch (optional, for thickening the sauce)
  • 1/4 cup Water

Vegetables

  • 1 cup Broccoli (chopped)
  • 1 cup Carrots (sliced)
  • 1 cup Bell peppers (sliced)
  • 2 green onions Green onions (sliced for garnish)
  • 1 tablespoon Sesame seeds

Instructions 

  • Cook rice according to package instructions, then set aside.
  • Cut chicken into small pieces, season with salt and pepper. Cook in a skillet with oil until golden and cooked through.
  • Mix honey, soy sauce, minced garlic, water, and cornstarch (if using) to make the sauce.
  • Add vegetables to the skillet and cook until tender-crisp. Pour in the honey garlic sauce, simmer until thickened, then coat the chicken and vegetables.
  • Serve the chicken and vegetables over rice, garnished with green onions and sesame seeds.

Notes

For extra flavor, add a splash of rice vinegar or a pinch of red pepper flakes to the sauce.
