Ingredients

1lblean ground beef (90/10)
1tbspolive oil
1largeyellow onion, diced
3clovesgarlic, minced
2largebell peppers (any color), diced
1(14.5 oz)can diced tomatoes, undrained
1(8 oz)can tomato sauce
1cupbeef broth
1/2cupuncooked brown rice
1tbspWorcestershire sauce
1tspdried Italian seasoning
1/2tspsmoked paprika
to tasteSalt and black pepper
1/2cupshredded mozzarella cheese
1/4cupfresh parsley, chopped, for garnish
Instructions
Cook ground beef and diced onion in olive oil until browned, then drain excess fat.
Add garlic and peppers; cook until peppers soften.
Stir in tomatoes, tomato sauce, broth, rice, Worcestershire, Italian seasoning, and paprika. Bring to boil, then simmer covered for 20-25 minutes until rice is tender.
Check rice; add more broth if needed. Season with salt and pepper.
Sprinkle cheese on top, cover, and cook until melted. Garnish with parsley before serving.
