Ingredients

Meat and Vegetables

  • 1 lb lean ground beef (90/10)
  • 1 tbsp olive oil
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 large bell peppers (any color), diced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (8 oz) can tomato sauce
  • 1 cup beef broth
  • 1/2 cup uncooked brown rice
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried Italian seasoning
  • 1/2 tsp smoked paprika
  • to taste Salt and black pepper
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh parsley, chopped, for garnish

Instructions 

  • Cook ground beef and diced onion in olive oil until browned, then add garlic and peppers; cook 3-4 minutes.
  • Add tomatoes, tomato sauce, broth, rice, Worcestershire, Italian seasoning, and paprika; bring to a boil.
  • Reduce heat, cover, and simmer 20-25 minutes until rice is tender and liquid absorbed.
  • Check rice, add more broth if needed, then season with salt and pepper.
  • Sprinkle cheese on top, cover, and cook 2-3 minutes until melted. Garnish with parsley before serving.

Notes

For extra flavor, add a dash of hot sauce or red pepper flakes.
