Ingredients

Meat and Vegetables

  • 1 lb lean ground beef (90/10)
  • 1 tbsp olive oil
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 large bell peppers (any color), diced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (8 oz) can tomato sauce
  • 1 cup beef broth
  • 1/2 cup uncooked brown rice
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried Italian seasoning
  • 1/2 tsp smoked paprika
  • to taste Salt and black pepper
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh parsley, chopped, for garnish

Instructions 

  • Cook ground beef and diced onion in olive oil until browned, then drain excess fat.
  • Add garlic and peppers; cook until peppers soften.
  • Stir in tomatoes, tomato sauce, broth, rice, Worcestershire, Italian seasoning, and paprika. Bring to boil, then simmer covered for 20-25 minutes until rice is tender.
  • Check rice; add more broth if needed. Season with salt and pepper.
  • Sprinkle cheese on top, cover, and cook until melted. Garnish with parsley before serving.

Notes

This dish is perfect for meal prep and can be stored in the fridge for up to 3 days.
