Ingredients

vanilla extract

stevia glycerite

plain Greek yogurt

unsweetened whey protein powder

baking powder

avocado oil cooking spray
Instructions
Whisk eggs, vanilla, stevia, and Greek yogurt until smooth.
Add whey protein and whisk until smooth; scrape sides as needed.
Mix in baking powder and let batter rest for 1-2 minutes.
Heat skillet over medium, spray with avocado oil.
Use 1.5-tbsp scoop to pour batter; cook until bubbles form, then flip and cook briefly.
Serve immediately after cooking.
Notes
For best results, do not overmix the batter to keep pancakes fluffy.
