Delicious and nutritious high-protein pancakes perfect for a healthy breakfast.

Ingredients

Eggs

  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon stevia glycerite
  • ½ cup plain Greek yogurt
  • 2 scoops unsweetened whey protein powder
  • 1 teaspoon baking powder
  • 1.5 tablespoons avocado oil cooking spray

Instructions 

  • Whisk eggs, vanilla, stevia, and Greek yogurt until smooth.
  • Add whey protein and whisk until smooth; scrape sides as needed.
  • Mix in baking powder and let batter rest for 1-2 minutes.
  • Heat skillet over medium, spray with avocado oil.
  • Use 1.5-tbsp scoop to pour batter; cook until bubbles form, then flip and cook briefly.
  • Serve immediately after cooking.

Notes

For best results, do not overmix the batter to keep pancakes fluffy.
