A hearty and nutritious lentil soup packed with protein and flavor, perfect for a wholesome meal.

Ingredients

Dry Lentils

  • 1.25 cups dry brown lentils, rinsed and drained
  • 1 tbsp olive oil
  • 1 large yellow onion, finely diced
  • 2 medium carrots, diced
  • 2 celery stalks diced celery stalks
  • 3 garlic cloves minced garlic
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp black pepper
  • 1 tsp salt, plus more to taste
  • 6 cups low-sodium vegetable broth
  • 1 can (14.5 oz) diced tomatoes with juices
  • 1 bay leaf bay leaf
  • 0.5 lemon juice of 1/2 lemon
  • to taste fresh parsley, finely chopped, for garnish

Instructions 

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook for 5–7 minutes until softened.
  • Add garlic, cumin, smoked paprika, black pepper, and salt; cook for 30 seconds until fragrant.
  • Add lentils, broth, tomatoes, and bay leaf; stir to combine and bring to a boil.
  • Reduce heat and simmer uncovered for 30–35 minutes until lentils are tender. Remove bay leaf.
  • Stir in lemon juice, adjust seasoning, and serve garnished with parsley.

Notes

This soup is a great source of plant-based protein and fiber. Feel free to add more herbs for extra flavor.
