A nutritious and protein-packed egg bake perfect for breakfast or brunch, combining fresh vegetables and cheesy goodness.

Ingredients

Eggs

  • 12 large eggs

Dairy

  • 16 ounces full-fat cottage cheese
  • 0.25 cup shredded gruyere or gouda cheese
  • 0.5 cup shredded cheddar cheese

Vegetables

  • 1 large red bell pepper – diced
  • 0.5 cup diced yellow onion
  • 4 cups chopped spinach

Seasonings

  • 0.5 teaspoon garlic
  • 0.5 teaspoon Italian seasoning
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper

Instructions 

  • Preheat oven to 375°F (190°C). Spray a 9×13 inch baking dish.
  • Add diced vegetables evenly in the dish. Whisk eggs, cottage cheese, seasonings, and 1/4 cup gouda cheese; pour over veggies.
  • Spread eggs evenly and top with remaining cheddar cheese.
  • Bake for 50-55 minutes until set. Cool for 15 minutes before slicing and serving.

Notes

Use fresh vegetables for best flavor. Can be prepared ahead and reheated.
