Ingredients

Protein

  • 1 lb chicken breast, diced
  • 1 cup cooked brown rice

Beans and Vegetables

  • 1 can black beans, drained and rinsed
  • 1 large bell pepper, chopped
  • 1 small onion, diced
  • 1 cup corn kernels (frozen or fresh)

Spices and Seasonings

  • 1 tsp cumin
  • 1 tsp chili powder

Instructions 

  • Dice the onion and chop the bell pepper.
  • Cook the chicken: Sauté diced chicken with spices until fully cooked (~7-10 min).
  • Add vegetables and corn: Stir in onion, bell pepper, and corn; cook 3-4 min.
  • Combine beans, rice, and salsa: Mix in black beans, rice, and salsa; cook 3-5 min.
  • Assemble bowls: Top with sliced avocado, cilantro, and lime wedges.
