A flavorful baked fish dish infused with fresh herbs and briny green olives, perfect for a quick and healthy meal.

Ingredients

Protein

  • 4 fillets fresh fish fillets (cod, tilapia, or sea bass) (mild white fish preferred)
  • 1/2 cup green olives, pitted and sliced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 3 cloves garlic, crushed
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • to taste sea salt Sea salt
  • to taste black pepper Black pepper

Instructions 

  • Preheat oven to 400°F (200°C).
  • Pat fish fillets dry and mix herbs, garlic, olives, lemon juice, olive oil, salt, and pepper.
  • Spread herb mixture over fillets and place in a baking dish.
  • Bake for 15-18 minutes until fish flakes easily.
  • Rest briefly, then serve garnished with herbs or lemon if desired.

Notes

Use fresh herbs for the best flavor and adjust salt and pepper to taste.
