Ingredients

Oil

  • 0.25 cup Olive Oil (extra virgin)

Vegetables

  • 1 small Onion (diced)
  • 2 medium Shallots (chopped)
  • 4 cloves Garlic (mashed)
  • 2 carrots Carrots (chopped into coins)
  • 2 stalks Celery Stalks (diced)

Beans

  • 3 15 oz cans Cannellini Beans (drained and rinsed)

Herbs & Spices

  • 2 bay leaves Bay Leaves
  • 1 tablespoon Italian Seasoning
  • 0.5 teaspoon Red Pepper Flakes

Broth & Seasonings

  • 5-6 cups Vegetable Broth
  • 0.5 teaspoon Sea Salt
  • 0.25 teaspoon Ground Black Pepper

Greens

  • 3 cups Fresh Spinach

Instructions 

  • Heat olive oil in a large pot over medium-low heat. Sauté diced onion, garlic, and shallots for 3-4 minutes until translucent.
  • Add chopped carrots and celery; cook for 7-10 minutes to develop flavors.
  • Rinse and drain beans, then add to the pot with bay leaves, herbs, broth, salt, and pepper. Bring to a boil, then simmer for 15 minutes.
  • Remove bay leaves, blend 2 cups of soup until thick, then return to pot and stir. Add spinach and cook until wilted.
  • Serve hot, garnished with parsley if desired, with crusty bread.

Notes

For extra flavor, add a squeeze of lemon or a drizzle of olive oil before serving.
