Instructions
Heat olive oil in a large pot over medium-low heat. Sauté diced onion, garlic, and shallots for 3-4 minutes until translucent.
Add chopped carrots and celery; cook for 7-10 minutes to develop flavors.
Rinse and drain beans, then add to the pot with bay leaves, herbs, broth, salt, and pepper. Bring to a boil, then simmer for 15 minutes.
Remove bay leaves, blend 2 cups of soup until thick, then return to pot and stir. Add spinach and cook until wilted.
Serve hot, garnished with parsley if desired, with crusty bread.
Notes
For extra flavor, add a squeeze of lemon or a drizzle of olive oil before serving.
