A comforting and easy one-pot chicken stew perfect for family dinners. Loaded with vegetables and flavorful broth, it’s a complete meal in one dish.

Ingredients

Protein

  • 1 lb boneless chicken thighs or breasts, cut into chunks

Vegetables

  • 2 tbsp olive oil
  • 1 unit onion, diced
  • 2 units carrots, sliced
  • 2 stalks celery, chopped

Aromatics

  • 3 cloves garlic, minced

Broth & Potatoes

  • 3 cups chicken broth
  • 1 cup chopped potatoes (optional)

Greens

  • 1 cup green beans or peas

Spices & Seasonings

  • 1 tsp dried thyme
  • Salt and pepper to taste Salt and pepper

Thickening (optional)

  • 1 tbsp cornstarch + 2 tbsp water (for thickening)

Instructions 

  • Season chicken with salt and pepper.
  • Heat oil, sear chicken until browned, then remove.
  • Sauté onion, carrots, and celery until soft.
  • Add garlic and thyme; cook briefly. Return chicken, add broth, and simmer.
  • Add potatoes, cook 25 mins. Add greens, cook 10 mins. Thicken if desired. Adjust seasoning and serve.

Notes

Use fresh or frozen vegetables as preferred. Adjust seasoning to taste.
