A comforting and easy one-pot chicken stew perfect for family dinners. Loaded with vegetables and flavorful broth, it’s a complete meal in one dish.
Ingredients
Protein

boneless chicken thighs or breasts, cut into chunks
Vegetables

olive oil

onion, diced

carrots, sliced
2
stalks
celery, chopped
Aromatics

cloves
garlic, minced
Broth & Potatoes

chicken broth

cup
chopped potatoes (optional)
Greens

green beans or peas
Spices & Seasonings

tsp
dried thyme
Salt and pepper to taste

Thickening (optional)

cornstarch + 2 tbsp water
(for thickening)
Instructions
Season chicken with salt and pepper.
Heat oil, sear chicken until browned, then remove.
Sauté onion, carrots, and celery until soft.
Add garlic and thyme; cook briefly. Return chicken, add broth, and simmer.
Add potatoes, cook 25 mins. Add greens, cook 10 mins. Thicken if desired. Adjust seasoning and serve.
Notes
Use fresh or frozen vegetables as preferred. Adjust seasoning to taste.
