A nutritious and colorful omelette packed with fresh vegetables, perfect for a quick and healthy breakfast.

Ingredients

Eggs

  • 3 large eggs

Vegetables

  • 0.5 cup fresh spinach, chopped
  • 0.25 cup mushrooms, sliced
  • 0.25 cup bell peppers, diced

Other

  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • for garnish Fresh herbs (optional)

Instructions 

  • Wash and chop vegetables; whisk eggs with salt and pepper.
  • Heat olive oil in a skillet; sauté mushrooms and peppers for 3-4 minutes.
  • Add spinach; cook until wilted, about 1 minute.
  • Pour eggs into skillet; cook until edges set, then fold in half and cook until fully set.
  • Slide omelette onto plate; garnish with herbs and serve.

Notes

Feel free to add cheese or other vegetables for variety.
