Delight in these light and fluffy vanilla cupcakes made with wholesome ingredients, perfect for a quick treat or special occasion.

lemon juice (optional, but highly recommended)

egg, at room temperature
Instructions
Preheat oven to 350ºF (175ºC) and line a muffin pan with cupcake liners.
Mix milk and lemon juice; set aside. Sift flour and baking powder.
Cream butter and sugar until fluffy. Add yogurt, egg, and egg white; mix well.
Stir in vanilla and milk mixture. Gradually add flour mixture; mix until just combined.
Fill cupcake liners 1/2 to 2/3 full. Bake for 20 minutes or until golden and a toothpick comes out clean.
Cool completely before frosting or serving.
Notes
Use fresh baking powder for best rise. Do not over-mix to keep cupcakes light.
