Delight in these light and fluffy vanilla cupcakes made with wholesome ingredients, perfect for a quick treat or special occasion.

Ingredients

Dairy & Liquids

  • 0.5 cup milk or non-dairy milk
  • 1 teaspoon lemon juice (optional, but highly recommended)

Dry Ingredients

  • 1 cup all purpose flour
  • 1.25 teaspoons baking powder (make sure it's fresh!)

Fats & Sugars

  • 0.25 cup butter, room temperature and cut into slices
  • 0.33 cup granulated sugar

Dairy & Protein

  • 0.25 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 egg egg, at room temperature

Instructions 

  • Preheat oven to 350ºF (175ºC) and line a muffin pan with cupcake liners.
  • Mix milk and lemon juice; set aside. Sift flour and baking powder.
  • Cream butter and sugar until fluffy. Add yogurt, egg, and egg white; mix well.
  • Stir in vanilla and milk mixture. Gradually add flour mixture; mix until just combined.
  • Fill cupcake liners 1/2 to 2/3 full. Bake for 20 minutes or until golden and a toothpick comes out clean.
  • Cool completely before frosting or serving.

Notes

Use fresh baking powder for best rise. Do not over-mix to keep cupcakes light.
