Ingredients

Protein

  • 1 lb ground chicken breast

Vegetables & Greens

  • 2 heads Butter or Bibb lettuce, leaves separated

Sauces & Condiments

  • 1/4 cup low-sodium tamari or soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon freshly grated ginger
  • 3 cloves garlic, minced
  • 1/2 cup canned water chestnuts, drained and finely diced
  • 1/4 cup sliced green onions
  • 1 teaspoon sesame seeds

Instructions 

  • Whisk together tamari, honey, rice vinegar, sesame oil, ginger, and garlic to make the sauce.
  • Cook ground chicken in a skillet until browned, about 7-9 minutes.
  • Add water chestnuts and sauté for 2 minutes.
  • Pour sauce over chicken, simmer 3-5 minutes until thickened, then stir in green onions.
  • Fill lettuce leaves with chicken mixture, garnish with green onions and sesame seeds, then serve.

Notes

Use fresh lettuce for best crunch and flavor.
