Delicious and wholesome pecan pie bars made with almond flour and natural sweeteners, perfect for a healthy treat.

Ingredients

Crust

  • 1 3/4 cups almond flour
  • 1 tbsp cornstarch
  • 1/4 tsp cinnamon
  • 1/4 cup coconut oil (melted)
  • 1/3 cup maple syrup (or honey)
  • 2 large eggs
  • 1/4 cup coconut oil (melted)
  • 3/4 cup maple syrup (or honey)
  • 2 tsp pure vanilla extract
  • 2 tbsp cornstarch
  • 2 cups pecans (coarsely chopped)

Cooking spray (I use Misto)

Instructions 

  • Preheat oven to 350°F (175°C). Line an 8x8 baking dish with parchment and spray with cooking spray.
  • Mix almond flour, cornstarch, and cinnamon. Add melted coconut oil and maple syrup; combine.
  • Press dough into dish and bake for 15 minutes.
  • Whisk eggs, coconut oil, maple syrup, vanilla, and cornstarch. Stir in pecans.
  • Pour filling over crust and bake 15-20 minutes until firm. Cool and chill for at least 4 hours.
  • Cut into 9 squares and serve chilled or warm for gooey bars.

Notes

Chill bars thoroughly for best texture. For a softer bar, let warm slightly before serving.
