Delicious and wholesome pecan pie bars made with almond flour and natural sweeteners, perfect for a healthy treat.
Ingredients
Crust

coconut oil (melted)

maple syrup (or honey)

cornstarch

pecans (coarsely chopped)
Cooking spray (I use Misto)
Instructions
Preheat oven to 350°F (175°C). Line an 8x8 baking dish with parchment and spray with cooking spray.
Mix almond flour, cornstarch, and cinnamon. Add melted coconut oil and maple syrup; combine.
Press dough into dish and bake for 15 minutes.
Whisk eggs, coconut oil, maple syrup, vanilla, and cornstarch. Stir in pecans.
Pour filling over crust and bake 15-20 minutes until firm. Cool and chill for at least 4 hours.
Cut into 9 squares and serve chilled or warm for gooey bars.
Notes
Chill bars thoroughly for best texture. For a softer bar, let warm slightly before serving.
