Wet ingredients

mashed ripe bananas
(about 3 medium ripe bananas)

natural creamy or crunchy peanut butter
(just peanuts and salt)

pure maple syrup

dairy free milk of choice
(e.g., almond milk)
Dry ingredients

gluten free oat flour
(can make your own)

(dairy free if desired, plus 2-3 tbsp for topping)
Instructions
Preheat oven to 350°F (175°C). Line a muffin tin with liners and spray with nonstick spray.
Mix mashed bananas, peanut butter, eggs, maple syrup, vanilla, and milk until smooth.
Stir in oat flour, baking powder, cinnamon, and salt. Fold in chocolate chips. Divide batter into muffin liners.
Bake for 20-25 minutes until a toothpick comes out clean. Cool on wire rack and enjoy!
Notes
For extra flavor, sprinkle additional chocolate chips on top before baking.
