A nutritious and flavorful baked dish combining lean ground turkey with sweet potatoes and vegetables, perfect for a wholesome meal.

Ingredients

Vegetables

  • 3 medium sweet potatoes (peeled and diced)
  • 1 medium onion (chopped)
  • 1 large bell pepper (chopped (any color))
  • 2 cups fresh spinach

Meat

  • 1 lb ground turkey (lean or extra-lean)

Spices & Oils

  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil (divided)
  • ½ cup shredded cheddar cheese (optional)

Instructions 

  • Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tablespoon olive oil, season with spices, and bake for 25 minutes.
  • Meanwhile, sauté onion and bell pepper in remaining olive oil until softened.
  • Add ground turkey to the vegetables and cook until browned. Stir in spinach until wilted.
  • Combine cooked sweet potatoes with the turkey mixture. Transfer to a baking dish.
  • Sprinkle with shredded cheddar cheese if desired, then bake for an additional 10 minutes.

Notes

For extra flavor, add a dash of hot sauce or fresh herbs before serving.
