Instructions
Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tablespoon olive oil, season with spices, and bake for 25 minutes.
Meanwhile, sauté onion and bell pepper in remaining olive oil until softened.
Add ground turkey to the vegetables and cook until browned. Stir in spinach until wilted.
Combine cooked sweet potatoes with the turkey mixture. Transfer to a baking dish.
Sprinkle with shredded cheddar cheese if desired, then bake for an additional 10 minutes.
Notes
For extra flavor, add a dash of hot sauce or fresh herbs before serving.
