Ingredients

Protein

  • 250 g chicken breast

Dressing

  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil

Salad

  • 200 g romaine lettuce
  • 100 g cherry tomatoes
  • 1 medium cucumber
  • 1 small red onion
  • 50 g Kalamata olives
  • 80 g feta cheese

Instructions 

  • Season chicken with 1/2 teaspoon salt and 1/4 teaspoon black pepper, then drizzle with 1 tablespoon olive oil. Grill for 5-7 minutes per side until cooked.
  • Chop lettuce, halve cherry tomatoes, slice cucumber and red onion. Combine in a large bowl with olives and feta.
  • Whisk together 2 tablespoons olive oil, lemon juice, oregano, and a pinch of salt and pepper for the dressing.
  • Slice the rested chicken and arrange on top of the salad. Drizzle with dressing and toss gently.

Notes

Use fresh ingredients for best flavor and consider adding herbs like parsley for extra freshness.
