Eggs

  • 10 large eggs
  • 1 red bell pepper red bell pepper, diced
  • 2 cups fresh spinach
  • 3 green onions green onions, sliced
  • 0.5 cup shredded cheddar cheese
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 1 spray olive oil spray

Instructions 

  • Preheat oven to 350°F (175°C) and spray a muffin tin with olive oil.
  • Divide diced bell pepper, spinach, and green onions into muffin cups.
  • Whisk eggs with salt and pepper, then pour into muffin cups.
  • Sprinkle cheese on top and bake for 18–22 minutes.
