A wholesome and flavorful carrot cake made with whole wheat flour and natural sweeteners, perfect for a healthy treat.

Ingredients

Dry ingredients

  • 1 ½ cups whole wheat or gluten-free flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp salt

Wet ingredients

  • 1 tbsp coconut oil or unsalted butter, melted and cooled slightly
  • 1 large egg, room temperature
  • 2 tsp vanilla extract
  • ½ cup pure maple syrup
  • ¼ cup plain nonfat Greek yogurt
  • ¼ cup nonfat milk
  • 2 cups freshly grated carrots
  • 8 oz nonfat ricotta cheese
  • 3 tbsp plain nonfat Greek yogurt
  • 2 tbsp agave
  • 1 tsp vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C) and prepare a 9-inch square pan.
  • Mix dry ingredients in a bowl; whisk wet ingredients in another, then combine.
  • Fold in grated carrots, pour batter into pan, and bake for 28-31 minutes.
  • Cool, then prepare frosting by mixing ricotta, Greek yogurt, agave, and vanilla.
  • Spread frosting on cooled cake and let set for 1-2 hours before serving.

Notes

For best results, use fresh grated carrots and measure ingredients accurately.
