Instructions
Preheat oven to 350°F (175°C) and prepare a 9-inch square pan.
Mix dry ingredients in a bowl; whisk wet ingredients in another, then combine.
Fold in grated carrots, pour batter into pan, and bake for 28-31 minutes.
Cool, then prepare frosting by mixing ricotta, Greek yogurt, agave, and vanilla.
Spread frosting on cooled cake and let set for 1-2 hours before serving.

For best results, use fresh grated carrots and measure ingredients accurately.
