A vibrant and nutritious salad combining grilled chicken, fresh fruits, and crunchy vegetables, perfect for a light and healthy meal.

Ingredients

Protein

  • 1 lb chicken breasts
  • 2 tsp kosher salt (or to taste)
  • 0.25 tsp black pepper (or to taste)
  • 0.5 tbsp olive oil

Vegetables & Fruits

  • 3-4 cups fresh arugula
  • 0.75 cup grape tomatoes
  • 2 garden cucumbers cucumbers
  • 1 mango mango
  • 1 avocado avocado
  • 0.5 small purple onion

Dressing

  • 1 tbsp maple syrup
  • 2 tbsp apple cider vinegar
  • 3 tbsp olive oil
  • 0.5 tsp kosher salt (or to taste)
  • 0.25 tsp ground dry mustard
  • 0.25 tsp onion powder
  • 1 tsp poppy seeds

Instructions 

  • Mix dressing ingredients and refrigerate.
  • Season and grill or pan-fry chicken until cooked, then rest and cube.
  • Prepare veggies: rinse arugula, chop onion, halve tomatoes, slice cucumbers, peel and dice mango and avocado.
  • Combine all ingredients in a large bowl, pour dressing, and toss to coat.

Use fresh ingredients for best flavor and texture.
