  • 1 tablespoon Baking Soda

  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Nutmeg
  • 0.25 teaspoon Ginger (Pinch.)

Wet Ingredients

  • 0.75 cups Greek Yogurt (Keeps muffins moist.)
  • 0.75 cups Applesauce (Keeps muffins moist.)
  • 0.75 cups Pure Maple Syrup (Natural sweetener.)
  • 2 eggs Eggs
  • 1 teaspoon Vanilla Extract

Instructions 

  • Preheat oven to 375°F (190°C). Line a muffin tin.
  • Whisk wet ingredients: yogurt, applesauce, maple syrup, eggs, vanilla.
  • Mix in grated carrots.
  • Add dry ingredients and gently fold until just combined.
  • Divide batter into muffin cups and bake 18-22 minutes.
  • Cool in pan 5 minutes, then transfer to wire rack.
