Basic ingredients

  • 0.5 cup white whole wheat flour or gluten-free flour
  • 0.375 tsp cornstarch
  • 0.125 tsp baking powder
  • 1 tbsp unsalted butter or vegan butter (melted and cooled)
  • 1 tbsp unsweetened vanilla almond milk (room temperature)
  • 0.5 tsp vanilla extract
  • 0.25 tsp butter extract
  • 0.375 tsp liquid stevia (see Notes)
  • 2 tbsp pure maple syrup (room temperature)
  • 1.125 cup white whole wheat flour or gluten-free flour
  • 0.25 tsp ground cinnamon (see Notes)
  • 0.75 tsp cornstarch
  • 0.25 tsp baking powder
  • 0.25 tsp salt
  • 2 tbsp unsalted butter or vegan butter (melted and cooled)
  • 1.5 tsp vanilla extract
  • 0.75 tsp butter extract
  • 1.125 tsp liquid stevia (see Notes)
  • 7 tbsp pumpkin purée (room temperature, not pie mix)
  • 2 tbsp pure maple syrup (room temperature)
  • 1.125 cup white whole wheat flour or gluten-free flour
  • 0.5 cup unsweetened cocoa powder
  • 0.75 tsp cornstarch
  • 0.25 tsp baking powder
  • 0.25 tsp salt
  • 2 tbsp unsalted butter or vegan butter (melted and cooled)
  • 3 tbsp unsweetened vanilla almond milk (room temperature)
  • 1.5 tsp vanilla extract
  • 0.75 tsp butter extract
  • 1.125 tsp liquid stevia (see Notes)
  • 2 tbsp pumpkin purée (room temperature)
  • 6 tbsp pure maple syrup (room temperature)

Instructions 

  • Mix flours, cornstarch, baking powder, and salt. In another bowl, combine melted butter, almond milk, vanilla, butter extract, and stevia; stir in maple syrup. Mix dry and wet ingredients until just combined.
  • Shape classic dough into a cylinder, wrap, and freeze. Prepare pumpkin dough similarly, shape into rectangle, and wrap. Roll pumpkin dough around classic, seal, and freeze.
  • Make chocolate dough by mixing flour, cocoa, cornstarch, baking powder, and salt. Combine melted butter, almond milk, vanilla, butter extract, stevia, pumpkin, and maple syrup; add dry ingredients. Shape into rectangle, wrap, and freeze with other logs.
  • Slice frozen logs into discs, arrange on baking sheets, and bake at 350°F for 5 minutes. Cool before serving.

Notes

Chill the dough logs thoroughly for clean slices and better texture.
