A hearty and nutritious beef stew packed with vegetables and rich flavors, perfect for a comforting meal.

boneless beef chuck

(or 3 cups broth + 3 cups water)

small Yukon gold potatoes
(cut into 1-inch pieces)

(sliced into ¼-inch coins)

celery stalks
(sliced ¼-inch thick)

Instructions
Pat the beef dry, season with salt and pepper, then brown in batches in hot oil. Set aside.
Sauté onions in the same pot until softened, then add carrots and celery; cook for 3–4 minutes. Add garlic and cook 30 seconds.
Return beef to the pot, sprinkle with flour, and stir to coat. Pour in broth, tomato paste, and vinegar; stir well.
Add potatoes, bring to a boil, then reduce heat, cover, and simmer for 2 hours until beef is tender. Stir in peas in the last 5 minutes.
If desired, thicken the stew with a cornstarch slurry by whisking 1½–2 tbsp cornstarch with cold water and stirring into the stew for 2–3 minutes.
Notes
For a thicker stew, add a cornstarch slurry during the last few minutes of simmering.
