A hearty and nutritious beef stew packed with vegetables and rich flavors, perfect for a comforting meal.

Ingredients

Meat

  • 2.5 lbs boneless beef chuck (cut into 1-inch pieces)
  • 2 tsp kosher salt
  • Freshly ground black pepper
  • 3 tbsp avocado oil
  • 1 large yellow onion (chopped)
  • 5 cloves garlic (smashed)
  • 2 tbsp tomato paste
  • ¼ cup all-purpose flour (gluten-free if needed)
  • 6 cups beef broth or bone broth (or 3 cups broth + 3 cups water)
  • 2 tbsp balsamic vinegar
  • 1 lb small Yukon gold potatoes (cut into 1-inch pieces)
  • 4 large carrots (sliced into ¼-inch coins)
  • 4 large celery stalks (sliced ¼-inch thick)
  • 1 cup frozen peas

Instructions 

  • Pat the beef dry, season with salt and pepper, then brown in batches in hot oil. Set aside.
  • Sauté onions in the same pot until softened, then add carrots and celery; cook for 3–4 minutes. Add garlic and cook 30 seconds.
  • Return beef to the pot, sprinkle with flour, and stir to coat. Pour in broth, tomato paste, and vinegar; stir well.
  • Add potatoes, bring to a boil, then reduce heat, cover, and simmer for 2 hours until beef is tender. Stir in peas in the last 5 minutes.
  • If desired, thicken the stew with a cornstarch slurry by whisking 1½–2 tbsp cornstarch with cold water and stirring into the stew for 2–3 minutes.

Notes

For a thicker stew, add a cornstarch slurry during the last few minutes of simmering.
